Ingredients:

- 3 cups (375g) all-purpose flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar
- 1/2 cup (120ml) molasses
- 1 large egg
- 1 tsp vanilla extract

Prepare the Dough:
- In a large bowl, whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
- In another bowl, beat the butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. Wrap the dough in plastic wrap and chill for at least 1 hour.

Roll and Cut:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the dough on a floured surface to about 1/4 inch thick. Use cookie cutters to create your favorite gingerbread shapes.
